
The conservation of food of animal origin can present specific microbiological and chemical risks and therefore requires specific food hygiene regulations, capable of ensuring a high level of public health protection.
The requirements provided for by the CE mark are integrated with those provided for by the EC regulation on food hygiene 852/2004, which concerns, in particular, the recognition of operators in the sector for the production and sale of food products.
The requirements for the issuing of the CE mark are contained in EC regulation 853/2004 and apply to foods of animal origin, processed or unprocessed.
The implementation of the requirements necessary for the issuing of the CE mark for products of animal origin therefore represents a study path of the hygienic-sanitary problems and the creation of procedures aimed at the evaluation and management of the risks related to the product category.
